The Mercantour territory

With a length of 150 km, the territory extends over six valleys in the Southern Alps and covers two departments of France: the Alpes-Maritimes for about two-thirds of its surface, and the Alpes-de-Haute-Provence. The crystalline massif of the Mercantour National Park has valleys filled with the scents of the Mediterranean, Provence, the Alps and ItalyVerdon, Cians-Var, Ubaye, Tinée, Vésubie and Roya-Bévéra: each valley has its own distinct character!

The Mercantour Écotourisme association, as its name suggests, develops ecotourism, a form of responsible travel in natural areas that contributes to the protection of the environment and the well-being of local populations. Alongside the Mercantour National Park, it is a member of the European Charter for Sustainable Tourism (ECST).

Their values, their background

L'hôtel, restaurant le Cheval Blanc est un authentique relais de diligences rénové au goût du jour. Véritable institution et plus ancien établissement de Barcelonnette. Tenu par la famille Barneaud depuis 105 ans.

Maître cuisinier de père en fils depuis 4 générations, Christophe élabore ses plats et ses déserts avec des produits frais en étroite collaboration avec les producteurs locaux. Les menus à l'ardoise varient suivant les saisons.

Le Cheval Blanc

A welcoming family atmosphere awaits diners at Le Cheval Blanc. Christophe, a "maitre restaurateur," serves local cuisine made from fresh, seasonal ingredients. Blackboard menu which changes every week depending on the market.
